Bringing cooking into the bookworld is such a fun idea! I had a great time creating some of the recipes that were featured in this book and it was tasty too! I couldn't turn down a White Chocolate Cranberry cookie so of course I had to make that one and then I made Veggiedillas with Avocado Dipping Sauce. Both of which were amazing and I will definitely be making them again sometime soon. 


Veggiedillas with Avocado Dipping Sauce

4 tablespoons butter
1/4 cup water
1 cup sliced onion
8 burrito size flour tortillas
1 cup sliced baby bella mushrooms
Nonstick cooking spray
1 cup sliced bell pepper (red, yellow or green)
2 cups shredded Mexican cheese blend
1 packet taco seasoning mix 

In a medium skillet over low heat, melt butter and sauté onions, mushrooms, and bell pepper for 8-10 minutes. Add taco seasoning and water. Simmer for 5 more minutes and remove from heat. In a medium skillet over low heat, coat with cooking spray and lay a tortilla flat in the skillet. Cover half of the tortilla with sautéed veggies and cheese. Then fold the empty side on top of the mixture and allow to cook for 2 minutes, pressing down with a spatula. Next, flip the quesadilla and cook for an additional 2 minutes. Remove from heat and repeat this process with remaining ingredients. Cut quesadillas into thirds and serve with Avocado Dipping Sauce.

Avocado Dipping Sauce
2 avocados
1/2 cup plain Greek yogurt
1 teaspoon minced garlic
1/2 teaspoon salt
Juice of 1 lime
In a stand-up mixer, add avocado, yogurt, garlic, salt, and lime. Blend on low for 1 minute. 

Thoughts: 
These were seriously so good I didn't even want to share them with my family, I just wanted to eat them all for myself. The dipping sauce made this dish the best thing of my night. It blended so well with the veggiedilla's and added a lot of flavor to them. 

I don't like peppers so I did not add them to my filling, instead I did a little more of the mushrooms and it worked perfectly. It's a very easy dish to make and also if you have any picky eaters you're trying to feed it's very simple to add or take something out so you can personalize each veggiedilla as needed. 


White Chocolate Cranberry Cookies
1 stick butter, softened
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups white chocolate chips
1 cup dried cranberries

Preheat oven to 350 degrees. In a large bowl, using a hand mixer, cream together butter and sugar until smooth, then add egg and vanilla. Slowly add flour, baking soda and baking powder until blended. Stir in the white chocolate chips and cranberries. Place 1 tablespoon at a time on a greased cookie sheet. Bake for 12-14 minutes.

Thoughts:
These cookies were so yummy! I loved the flavor of the cranberries with the white chocolate and they were super soft, which is how I like my cookies, so I loved them. It was almost a little cakey in texture but I thought it was great. 

I made these the week after Mother's Day weekend, the same weekend I made cupcakes for a Graduation party on top of a cake for Mother's Day, so I split this recipe in half since I already had so many many sweets floating around the house. I still had about 15 cookies so the full recipe should make well over two dozen, just so you know. 

Also when you're making this don't feel like you did something wrong when you see how loose the batter is. At first I was a little worried about it, even double checked I had everything correct, but the cookies turned out fine.

He pulled the old-fashioned tape recorder out of his backpack. He’d thought it had a fun vintage flair when he’d found it in the station’s dusty storeroom along with a pack of unused cassettes. He’d snagged the device and the tapes, then recorded the message. Now, he put the cued-up cassette into the recorder, checked that the batteries were good, and added a Post-it note to the top. He left the whole thing on her coffee table. All things considered, much better than a printed note.
Then he drew in a nervous breath, grabbed his suitcase, and gave the inside of the house one last, long look.
This was it, he thought as he headed for the door. For better or for worse, everything was about to change.
